The bread knife in Zwilling's Pro series is the result of a design decision that seems simple but changes how a knife feels in the hand: the curve of the bolster moves your grip forward towards the blade, into the balanced pinch grip professional chefs use. The 20 cm blade is forged from a single piece of Zwilling's special formula steel and ice-hardened with the Friodur process to 57 HRC, a hardness that balances edge retention against easy resharpening. The serrated blade cuts cleanly through hard crusts, moist sourdough and tomatoes without squashing them.
Friodur treatment means the steel is cooled to extremely low temperatures during hardening, giving a finer crystal structure and better corrosion resistance than conventionally hardened knife steel. The handle is ABS plastic with an integrated finger guard. Made in Solingen. Steel: ZWILLING Special Formula/Friodur, 57 HRC.
