A straight line is the hardest thing there is to draw by hand. With a knife, the pasta sheet easily ends up a little crooked and the edges a little ragged, and suddenly the tagliatelle look as if they've had a bad day. With this pasta wheel you instead roll out a clean, even edge in a single calm stroke, and it feels almost as satisfying as eating the result.
The wheel is made of brass with a smooth, straight edge, and it has that warm golden glow only real brass has. Over the years it darkens and develops a soft patina, and the wheel then bears the traces of every dinner it has been part of. The handle is solid canaletto walnut, the dark walnut with almost black veins, and it sits steady and warm in the hand. Wheel and handle are assembled by hand so the wheel runs lightly and evenly and follows the movement of your hand without hesitation.
Cut tagliatelle and pappardelle from a rolled sheet, trim lasagne sheets to size or make air holes in a pie crust. It works just as well for crackers, crispbread and biscuits, and when it's not in use it's welcome to stay out. It has earned it.
The pasta wheel is part of Marcato's Heritage range, where dark walnut and brass meet in kitchen tools inspired by the 20th-century Italian kitchen. Marcato has been making kitchen tools in Campodarsego near Padua since 1930.
