A bamboo sushi mat, or makisu, is used to shape sushi rolls with precision and even pressure.
The thin bamboo sticks are bound with wire in even rows, allowing the mat to move smoothly but retain its shape. It provides just the right amount of resistance when the rice is rolled, enough to create a dense and stable roll without crushing the filling.
This model measures 24 × 21 cm, a slightly more compact size that is particularly suitable for thinner hosomaki, tamago or small creative rolls where more control is desired. The natural surface of the bamboo prevents the rice from sticking, and because the material is light but durable, it will hold its shape for many years of use.
After use, the mat is rinsed in cold water and allowed to air dry. For stubborn grains of rice, a soft brush works better than detergent. It can also be used to shape omelettes, rice paper, or rolled desserts, or as a simple mat to gently dry something. It's a single-purpose tool, but it does more than you might think.
