    • A light and flexible Japanese bamboo brush, in Japanese yakumi yose, designed to be used with graters (oroshigane) or to apply liquid and seasoning with precision. In Japan, this type of brush is mainly used to collect and move grated ginger, wasabi or daikon from the grating surface, where it simultaneously helps preserve texture and flavour without metal utensils scratching or oxidizing the surface. So it's not the ideal choice of brush for scraping cinnamon rolls.

      The soft, flat bamboo strands are cut and pressed to just the right stiffness to act as both brush and scraper. Thanks to the material's natural antibacterial properties, it is also well suited for contact with raw ingredients.

      In addition to its traditional use, yakumi yose also works well as a light brush for soy sauce, marinade or glaze, for example in yakitori or takoyaki. It is easy to rinse clean and dries quickly without taking odor.
