Some pans are trendy and others are timeless, and Heritage clearly belongs to the second kind. It's a round Bundt pan with deep, sweeping flutes that twist around the cake like a swirl, and the result looks roughly like a cake would look if it had been to dance school. The gold-coloured exterior makes the pan as good-looking on display as it is in use.
The swirl isn't just beautiful, it's practical too. Icing sugar settles nicely in the furrows and a thin glaze runs down along the spirals, giving the cake a pattern that looks much harder to achieve than it is. The pan suits sponge cakes, pound cakes, lemon cakes and spiced coffee cakes, and holds approx. 2.4 litres, enough for a proper cake for a whole party.
The pan is cast in thick aluminium that conducts heat evenly, so the cake gets an even, golden surface all the way round. The inside has a non-stick coating, and with thorough greasing with butter and a little flour or cocoa before every bake, the cake releases easily and keeps every flute. Fill the pan no more than three-quarters full and let the cake cool for a while before turning it out.
Nordic Ware is the family business from Minneapolis that created the first Bundt pan in 1950 and still casts its pans in the USA.
