There are cakes, and then there are cakes that look as if they've been cut by a jeweller. Brilliance is Nordic Ware's tribute to the cut gemstone, with a shape made up of sharp, geometric facets reminiscent of a cut diamond. Or at least of the fine crystal bowl in grandma's display cabinet.
The facets are designed so glaze runs down the edges and pools in the angles, and icing sugar settles like hoarfrost on the ridges. The result is a cake that looks impressive before you've even cut into it, even if it's just a plain sponge or a lemon cake. The pan holds approx. 2.4 litres, just right for a cake for ten or twelve people.
The pan is cast in thick aluminium that conducts heat evenly, so all the sharp angles get the same colour and the cake bakes through without drying out at the edges. The inside has a non-stick coating, but for every detail to release perfectly the pan still needs to be greased thoroughly with butter and dusted with flour or cocoa before every bake. Fill it no more than three-quarters full and let the cake rest for a while before turning it out.
Nordic Ware is the family business from Minneapolis that created the very first Bundt pan in 1950 and still casts its pans in the USA.
