The baba mould, also known as a dariole mould, is the tall little vessel behind baba au rhum, the French yeast cake soaked in rum syrup until it cannot say no. It works just as well for fondants, puddings and small cakes that need a bit of height in life.
The mould measures 60 x 48 x 60 mm and has a rolled edge. The coating is a two-layer, PFAS-free non-stick that Gobel describes as one of the thickest around, so the cake releases without butter. It handles 250°C and is sold individually. Made in France by Gobel, who have been making bakeware since 1887.
