Ascorbic acid is a vitamin C used, among other things, as a preservative and to avoid oxidation. Commonly found as a flour treatment agent in wheat flour, it helps and facilitates dough maturation and the formation of gluten structures which in turn facilitates leavening and gives a stronger, softer bread.
Use: Dose as needed
Keep dry and cool away from direct sunlight. Use within six months of opening the package.
