Angled palette knife in stainless steel with black handle, designed for spreading fillings inside cake tins and rings. The 90° angled blade geometry allows the blade to be held flat against the bottom of the ring while the handle sits above the ring edge, which is necessary when working with mousse, bavarois, ganache and similar fillings that require a smooth, horizontal surface inside a mould. The generous extra height of 65 mm makes it easier to reach inside deep moulds and the smaller model can assist with plating in deep plates.
Available in two versions with different blade lengths: 18.5 cm and 9 cm. The lift height determines which ring depth is practically manageable; the blade length governs the reach when spreading.
