What sets an end-grain cutting board apart from a regular one is how the knife edge meets the wood. In a flat board the knife cuts straight through the grain, which wears the edge and shows as scratches on the surface over time. In end grain the knife meets the short end of the fibre instead, and the fibre gives way and closes again. This is the same principle that has made professional butcher blocks what they are since time immemorial, and what allows a well-maintained chopping block to last for decades.
The Carolina block from Ironwood is made from acacia wood in a square format, 46 x 46 centimetres and 7.5 centimetres thick. Acacia is a dense, hard wood with warm, lively variation in colour, which means no two blocks look exactly alike. It weighs 5.8 kilograms, stays put on the counter and has grooves for blood or other liquids. Four neoprene-coated feet prevent it from sliding, and a stainless steel ring in the edge makes it possible to hang it up when not in use.
The block works equally well as a serving board for cheese, charcuterie and bread. Acacia wood requires regular treatment with oil and should never be put in the dishwasher.
