It looks like kitchen paper, but the comparison ends there. Japanese absorbent sheets, or Leed paper, are used in professional kitchens to draw out moisture and fat without affecting the structure of the raw material. They are made from natural pulp with a density that absorbs evenly and quickly, making them indispensable when handling fish, meat and tofu.
In sushi kitchens, they are used to preserve the freshness and texture of raw fish, often by wrapping the pieces between sheets to draw out excess liquid. The same technique works equally well for wiping fried tempura, or for absorbing oil from freshly deep-fried vegetables.
Unlike ordinary paper, they do not break on contact with liquid. They can withstand cold, can be used in combination with ice, and leave no fibers or odor behind.
One of those tools that is completely invisible in the kitchen until one day you are without it - and suddenly notice how much it actually does.
