Meat or fillet knife, also known as a chutoh knife, from Miyabi's 7000D series. The blade is made according to the Damascus method with a hard CMV 60 steel in the core surrounded by 32 layers of softer steel on each side and has been sharpened at a really steep angle using the Honbazuki method.
The handle is a classic D-shape and is made of micarta and stainless steel.
