In its short 9 cm format, the shotoh is used much like a paring knife. The blade is small enough to hold with control against your thumb, making it a natural choice for peeling, trimming and precision work in the hand or on the board.
The MC63 powder steel core is ice-hardened with the CRYODUR process to 63 HRC and hand-finished using the three-step Honbazuke technique to an angle of 9.5 to 12 degrees per side. The blade has a hammered Tsuchime finish. The cocobolo pakkawood handle has a traditional Japanese D-shaped cross-section with a mosaic pin. Blade length 9 cm. Requires a whetstone for maintenance. Hand wash. Made in Seki, Japan.
