In its short 9 cm format, the shotoh is used much like a paring knife. The blade is small enough to hold with control against your thumb, making it a natural choice for peeling, trimming and precision work in the hand or on the board.
The SG2 powder steel core is ice-hardened with the CRYODUR process to 63 HRC and hand-finished using the three-step Honbazuke technique to an angle of 9.5 to 12 degrees per side. 101 layers of floral-pattern Damascus steel surround the core. The Karelian birch handle has a traditional Japanese D-shaped cross-section with mosaic pin and steel bolster. Blade length 9 cm. Hand wash. Made in Seki, Japan.
