The shotoh is the Japanese utility knife for precision work. The blade is shorter than a chef's knife but longer than a paring knife, making it manageable for tasks that need control: trimming, cleaning up, cutting fruit and vegetables, and handling ingredients too small for a chef's knife to feel right.
The SG2 powder steel core is ice-hardened with the CRYODUR process to 63 HRC and hand-finished using the three-step Honbazuke technique to an angle of 9.5 to 12 degrees per side. 101 layers of floral-pattern Damascus steel surround the core. The Karelian birch handle has a traditional Japanese D-shaped cross-section with mosaic pin and steel bolster. Blade length 13 cm. Hand wash. Made in Seki, Japan.
