66 HRC is what the SG2 Super Steel core reaches after Miyabi's CRYODUR hardening at minus 196 degrees. That's harder than almost anything else in this segment, and it means the edge stays sharp considerably longer than most production Japanese knives. Around the core sit 101 layers of Damascus steel, forming the distinctive floral pattern on the blade.
The Karelian birch handle, with its swirling grain, makes every knife unique. Mosaic pin and bolster in stainless steel. The edge is hand-finished using the Japanese Honbazuke technique. Gyuto, 20 cm. Maintain with a whetstone, not a honing steel. Hand wash. Made in Japan.
