Miyabi is Zwilling's Japanese line, made in Seki, and 5000 MCD is its most ambitious steel: a core of MC63 micro-carbide powder steel wrapped in 101 layers of Damascus, ice-hardened with the Cryodur process to 63 HRC. It's a hard steel that holds a thinner, sharper edge longer than conventional knife steel. The 23 cm bread knife is hand-sharpened using Miyabi's traditional three-step Honbazuke method, with an edge angle of 9–12 degrees per side.
The handle is birch with a black pakkawood frame, balanced against the Japanese blade geometry. The combination of a serrated edge and 63 HRC is unusual and effective: the blade cuts cleanly through hard bread crusts with minimal effort and stays sharp for a long time. Steel: MC63 micro-carbide powder steel, 101-layer Damascus, 63 HRC. Made in Seki, Japan.
