Filet knives

For preparing fish or meat. Available with flexible blades - which make it easier to remove skin from fish or sinews from meat, and hard blades - which are mainly for preparing slightly tougher fish. Available with wide blades (similar to the utility knife) and long narrow blades that are generally between 15 and 22 cm.
